| Nathan Klingbail Sous Chef Nathan Klingbail grew up in Michigan and after high school began attending culinary classes to gauge his interest in the profession. He quickly excelled and was recommended by one of his teachers to work at the Tower Restaurant in Edinburgh, Scotland. After returning to the U.S. he learned that chef Achatz was assembling a team at Trio. Nathan was a member of the Trio kitchen for Grant’s entire tenure, opening and closing the restaurant with Grant over a three-year period. As Grant built Alinea, Nathan took a position at Moto, and then left to open up the highly acclaimed Schwa with chef Michael Carlson, a former co-worker at Trio. In July 2007, Achatz asked Nathan to rejoin him, placing him as a Sous Chef at Alinea. |
